Caballero Zifar 2014

From a complex and extraordinary soil we obtain ancestral thin red grapes with the mythical personality of Ribera de Duero, grapes capable of reflecting the excellence of the 2014 harvest After 15 months of barrel aging comes the Caballero Zifar.

Senda de los Olivos Crianza

A Dry red wine. DO Ribera del Duero made of 100% Tempranillo grape variety.

Harvest time: Second week of October
Harvest: Manual in boxes of 10Kg.

Fermentation and Aging: Premaceration in a chilled chamber at 5ºC for 24 hours. The fermentation takes place partly in wooden barrels and part in stainless steel.

Aging: 12 months in new French oak cask.
Alcohol content: 14.5% vol.

Best time of consumption: From the third year until the eighth.
Service temperature: 14 – 16 º C.

Senda de los Olivos Roble 2015

A Dry red wine. DO Ribera del Duero made of 100% Tempranillo grape variety.

Harvest time: Second week of October
Harvest: Manual in boxes of 15Kg.

Fermentation and Aging: Maceration pre-fermentative in cold stainless steel tanks for 24 hours.

Aging: 3 months in new French oak cask.
Alcohol content: 14.5% vol.

Best time of consumption: Following the second year after the harvest.
Service temperature: 14 – 16 º C.

Senda de los Olivos Rueda 2015

A dry white wine. DO Ribera del Duero made of 100% Vardejo grape variety.

Harvest time: Between the last week of September and the first week of October
Harvest: Manual in boxes of 15Kg.
Fermentation and Aging: Fermentation in stainless steel at low temperatures.
Aging: 12 months in new French oak cask.
Alcohol content: 13% vol.

Best time of consumption: From the first to the third year.
Service temperature: 5 – 7 º C.

Zifar Crianza 2009

Made only with the Tempranillo variety from a selection of Pago wines located in different areas of the Ribera del Duero. The harvest takes place during the last week of September. In the winter when minimum temperatures of (-15.8 ° C) were reached and the hot and dry spring advanced the flowering; the scarcity of rains continued until in the month of August rainfall in the form of storms subsided the need for water and helped to restore the balance between phenolic maturity and industrial maturity. After its passage during 12 months by barrels of French Oak Barrels (60%) and American Oaks (40%) it was clarified with egg albumin and without being filtered.

Zifar Selección 2009

The harvest took place during the last days of September and the first of October. This year a historic record of production was reached within the Denomination of Origin. This wine is the result of the selection of two terroirs with strains aged 40 years of the variety Tinta Fina, pruned in traditional glass. Matured in French oak barrels for 18 months. They were bottled in June of 2008.
